Ingredients

  • For the cake
  • 7 oz milk chocolate
  • 5 oz unsalted butter
  • 4 oz sugar
  • 4 oz brown sugar
  • 2 oz cocoa powder
  • 6 oz Baileys Irish Cream
  • 3 eggs
  • 6 oz all purpose flour
  • 2 tsp baking powder
  • For the ganache
  • 7 oz dark chocolate
  • 4 oz heavy cream
  • 4 oz Baileys Irish Cream
  • 1 oz unsalted butter

Steps

For the cake
  1. Put the chocolate into the bowl: 5 sec. speed 8.
  2. Scrape down the sides of the bowl and add butter, sugar, cocoa, and Baileys: 2 min. 120°F speed 5.
  3. Allow to rest and cool for 15 minutes then add eggs: 5 sec. speed 5.
  4. Add flour and baking powder: 20 sec. speed 4.
  5. Check the mixture into the bowl, it must be smooth and completely combined.
  6. Pour mixture into the cake tin (greased) then bake in the preheated oven at 320°F for 45 minutes.
  7. Remove from oven and let it rest for 10 minutes before removing and set aside.
For the ganache
  1. Put the chocolate into the bowl: 5 sec. speed 8.
  2. Scrape down the sides of the bowl and add cream, Baileys and butter: 2 min. 120°F speed 5.
  3. Transfer the bowl in the fridge to rest for 1 hour and, every 15 minutes, stir a little to keep it smoother.
  4. Cut the cake in the middle and pour a soft layer of chocolate cream.
  5. Put back the half cake and spread the remaining chocolate ganache all over the top.
  6. Put into the fridge for at least 1 hours before cutting and serve.
