Apple crumble cheesecake

Ingredients

  • For the crumble
  • 2 oz brown sugar
  • 2 oz all purpose flour
  • 2 oz rolled oats
  • 2 oz slivered almonds
  • 2 tsp cinnamon
  • 1 tsp (essence) vanilla
  • 3 oz butter
  • For the base
  • 9 oz plain biscuits
  • 4 oz butter
  • For the filling
  • 26 oz cream cheese
  • 4 oz double cream
  • 3 oz sugar
  • 1 tsp (essence) vanilla
  • 7 oz (canned) apples
  • 1 tsp cinnamon

Steps

For the crumble
  1. Put into the blow brown sugar, flour, rolled oats, ailvered almonds, cinnamon and vanilla: 3 sec. speed 4.
  2. Transfer the cumble mixture into a small bowl, add butter and mix well by hand.
  3. Pour all into a baking tray, wrapped with baking paper, and bake at 350°F for 15 minutes, until golden.
  4. Wait untill completely cool, break up into small pieces and store until just before serving.
For the base
  1. Put into the bowl roughly broken up biscuits: 10 sec. speed 9.
  2. Add cold butter: 1 min. speed 6.
  3. Trasfer the mixture into the spring form (lined with baking paper) and heavy press with the back of a spoon.
  4. Sprinkle the apples with the ground cinnamon and place them on the biscuit base.
For the filling
  1. Put into the blow cream cheese, sugar and vanilla: 30 sec. speed 7.
  2. Scrape down the sides of the bowl and add double cream: 30 sec. speed 4.
  3. Check for a creamy and smooth result.
For the cheesecake
  1. Pour the creamy mixture over the apples and set aside in the refrigerator for at least 8 hours.
  2. Just before serving, pour on top the crushed cumble mixture.
